Scott’s Chicken and Quinoa Salad Recipe. Now there’s a sentence you wouldn’t have read here 12 months ago.
Yet here we are. All ready to print out and whip up a recipe for the most delicious, healthy and easy to make chicken and quinoa salad. As made by Scott.
I mean if ever there was a silver lining to being diagnosed with this IIH thing, Scott deciding to take over the cooking at our place would have to be it.
Before I knew I had IIH, I was the foodie in the family. I used to whip up themeals every night, the kids would have baked goods in their lunch box every weekand I lovedit. Friends used to call me Martha Stewart and would often put their requests in for sweet or savoury baked goods before calling infor a coffee.
Then Year of The Couch hit and Martha left the building quicker than you could ask, “How do we feel about non-coconut icing on our chocolate slice?”
Yep, all that medication I had to take to try and get my IIH into remission knocked me flat for a solid 12 months.
Pretty much the only thing I did each day was the school run. Then I’d force myself to belt out a blog post.
I blogged every day in 2015. My writing wasn’t the best – there wasn’ta whole lot of style or laughs happening back then– but blogging kept me in touch with people and I wasn’t going to give that up anytime soon.
Meanwhile, Scott went to work each day, leaving at 7am and getting home at 6pm. Then he would try and rustle something up for dinner, organise the kid’s lunch boxes for the next day and supervise their homework.
He also took it upon himself to do all of the housework every week and iron all of the clothes.
Looking back, I don’t know how he got through that year.
He silently carried all of his worries and concerns about me and various other things that were happening at the time and just got on with keeping our family of four running like clockwork.

And then, one day, he decided to plant a herb garden.
He started watching Jamie Oliver You Tube videos and began cooking the most amazing, fresh, healthy meals every night.
This was a man whose idea of cooking used to be speed dialing a pizza. Now we sit down to meals like Pesto Chicken or Pasta with Angus Beef – that one is delicious. Grab the recipe here.
Sotoday I give you Scott’s Chicken and Quinoa Salad. It’s the meal he served at my recent birthday dinner party. THAT was a fun night!

Scott's Chicken and Quinoa Salad Recipe

Serves 4
Ingredients
- 2 cups sunrice quinoa and brown rice mix
- 1/2 bag spinach
- 1 spring onion
- handful of coriander and mint
- good shake of cumin and all spice
- 1 chicken breast per person
- 1 lime
- 1 avocado
- handful of watercress
Instructions
- Cook quinoa & brown rice mix as per instructions on packet.
- Blitz spinach, spring onion, coriander and mint in a blender. Doesn't need to be super smooth - rustic is the look we're going for.
- Bash chicken until flat-ish. Slice into pieces.
- Coat chicken in all spice and cumin.
- Cook chicken in pan.
- Stir spinach mix through cooked quinoa. Add juice from the lime.
- Serve quinoa on plate, top with chicken.
- Add pieces of avocado (Scott uses a potato peeler for this. You could cut the avo into chunks. Whatever works for you)
- Add sprigs of fresh watercress and enjoy!
